Introducing our most advanced aerating model yet, the Aervana Select. The Aervana Select is the adjustable wine aerator reshaping how we aerate wine. With the turn of a dial, the Select allows wine enthusiasts to fine-tune the level of aeration per pour to perfectly suit the wine being served. Setting the dial to the zero degree position means the equivalent of pouring a glass straight from the bottle, or no aeration, while setting your dial to the maximum, or 120-degree position, is approximately equivalent to pouring a bottle into a decanter and expositing it to air for three hours. With the same easy-to-use, push-button technology as the rest of the Aervana Aeration Line, the Select allows you to dispense wine directly into your glass with the simple push of a button. Wine aeration (re)designed. With the turn of a dial, the Aervana Select allows you to choose exactly the right amount of aeration for the wine being served. The Select gives you the most control and flexibility of any aerating product yet.

The Select combines Aervana’s patented push-button technology for a seamless, one-touch pour with an all-new variable aeration dial, allowing users to select the amount of air infused with the wine to fine-tune the aeration effect per the wine being served.

For bold reds, the Select allows you to dial-up the aeration effect to smooth-out harsh tannins. For a light-bodied white, you can pour a glass from your personal wine tap without running the risk of stripping its flavor. And with the seamlessly-progressing dial, you can experiment with any setting in-between to find the perfect level of aeration to suit your preferences and the character of the wine.

Use this helpful tool to guide where to set your Select dial for different types of wine. Remember, every bottle is different and the ultimate judge is if you like it.

Wine Aeration 101

Different types of wine react to air differently. As soon as you open a bottle, evaporation and oxidation begin. If a wine is high in alcohol, tannins, sulfites or sulfides (as many wines, especially young reds are), these will start to dissipate when exposed to air.

For many red wines, this can produce a pleasing effect, softening some of the harsher taste experiences and making way to better taste other characteristics in the wine (fruits, minerality, etc.). This is why “decanting,” or pouring wine into a carafe and exposing the wine to air over time before consuming, is a centuries-old practice.

However, wines exhibiting fewer of these harsh characteristics do not necessarily need to breathe or can breathe for far less time, or else they can run the risk of being over-exposed to oxygen, actually muting their flavor.

There are guidelines for how much air certain styles and varietals of wine generally benefit from. There is, however, a necessary degree of experimentation with any wine, as every bottle is different.

Uncork that bottle. Its time for a taste test!

STEP 1: Uncork a bottle of wine and pour a small glass.

STEP 2: Assemble your Aervana and slip it over the same bottle. Adjust the dial to the desired position based on the varietal being served. Press the button on top to dispense a second small glass.

STEP 3: Taste the aerated glass. Take a sip of water, or wait for your palate to clear. Now taste the first, unaerated glass. Based on your experience tasting both glasses, adjust the dial position for more or less aeration to suit your taste or keep the dial at the suggested position if you are satisfied with the level.
