Cream Cheese Flan Recipe (Water Bath Method):
Ingredients: 4 large eggs, 8 oz cream cheese (room temp), 12 oz evaporated milk, 14 oz sweetened condensed milk, 1/2 cup sugar, 1 tsp vanilla, 2 cups water.
Instructions:
1. Caramel: Heat sugar till golden, pour into flan pan, spread and cool.
2. Flan Mix: Blend eggs, cream cheese, milk, condensed milk, vanilla. Pour into caramel-lined pan.
3. Seal: Close flan pan, latch lid.
4. Water Bath: Place flan pan in larger pan lined with towel. Add hot water, preheat oven to 350°F.
5. Bake: Bake both pans 1 hr 15 min. Cool, refrigerate 3 hrs or overnight.
6. Unmold: Run spatula, place plate, flip for flan release.
Cream Cheese Flan Recipe (Pot-in-Pot Method):
Ingredients: Same as above.
Instructions:
Steps 1 to 3 are the same as in the above recipe.
4. Steam Bath: Pour 2 cups water in larger pan, place trivet. Put flan pan on trivet, cover. Steam 20-30 min on medium flame.
5. Cool and Chill: Remove flan pan, cool, refrigerate 3 hrs or overnight.
6. Unmold: Open flan pan, place plate, quickly turn for flan release.
Both methods create tasty cream cheese flan with water bath or pot-in-pot technique.
