A banneton, or bread proofing basket, helps control the moisture and temperature of your dough. It also helps with forming a consistent shape and texture. All of which are key factors for creating a "skin". This makes for scoring, and making the perfect crust. It also leaves the spiral impressions of the cane basket which are so synonymous to an artisan loaf of bread.
