The ABCs of Making Meringue
A. Use a glass or metal bowl. Ensure it is very clean and dry with no oil residue.
B. Basic Recipe: Combine 1/2 cup water and 1 cup mix
C. Whip using countertop mixer with whisk attachment for 9-12 minutes until there are stiff peaks. Scrape bowl as needed, do not overbeat. Stop at stiff peaks.
Directions:
- Follow ABCs of meringue above.
- Gradually add 16 oz (3 cups) of powdered sugar. Mix on low just until incorporated (this prevents air bubbles), then use a spoon to continue mixing.
- Add water 1 tsp at a time until the desired thickness for icing has been reached.
