Season and break in your new mortar and pestle

When reviving a brand new mortar and pestle, it is recommended to first wash and dry before using, but you can take an extra moment to cure and season it too. This will prevent small grains that may break off into your food and give it unpleasant gritty texture, especially the rougher stone materials.

Curing:

  1. Rinse and dry the new mortar and pestle
  2. Add some uncooked rice and start mashing. You can add a few teaspoons of water to prevent the rice from flying out.
  3. Make sure to use the pestle and work its way up the sides.
  4. Once the rice turns into flower consistency, dump it out and repeat at least two more times.
  5. Rinse and dry. Now your mortar and pestle should be noticeably smoother and less gritty. Its now ready for use.

Seasoning :

After curing the mortar and pestle, you can choose to season your tool with your choice of flavors. Simply add the desired ingredients and mash into a paste (add more salt as needed to thin out the mixture). Spread the paste trough out and let it sit and marinate for a few hours before rinsing.
