Step 1 - Make sure the basket is generously floured (sift flour over it and rub some into the coils - too little flour and your dough might stick or the markings might not be visible).
- To achieve the shape benefits without the distinctive markings, line the basket with floured tea towels.
Step 2 - Place your shaped dough in the banneton, a nice side down.
- While it takes its second rise, give it some breathing room (by covering it with a tea towel or linen liner).
Step 3 - Once the dough is out of the cozy-basket-home, transfer it to a piece of parchment paper, an oven tray, or whatever you plan to use to do the transfer.
- Attention! Please dont put the basket in the oven!
Step 4 - We provide you with a bread lame that you can use to make slashes and beautiful patterns on the dough to let steam escape from the bread in a controlled manner.
